Whipped Cream:

1 cup very cold organic heavy cream

1 tablespoon coconut sugar
Instructions

Add six ounces of strawberries to a food processor and process until smooth (30–40 seconds), scraping sides as needed.

In a medium saucepan, whisk together coconut sugar, Sure‑Jell, cornstarch, and salt.

Add puréed strawberries and cook over medium‑high heat, stirring constantly.

Bring to a boil and continue boiling for 2 minutes, scraping sides and bottom to prevent scorching.

Transfer mixture to a large bowl, add lemon juice, and cool to room temperature.

Add remaining whole strawberries to the purée mixture and fold gently to coat.

Mound mixture into the prebaked pie shell, rearranging berries to fill gaps and improve appearance.

Refrigerate for at least 2 hours until well‑chilled.
For whipped cream

add cream and coconut sugar to a chilled mixing bowl.

Beat on low speed with chilled beaters until bubbles form (about 30 seconds).

Increase to medium speed and beat until trails appear in cream (30–45 seconds).

Increase to high speed and beat until cream doubles in volume and soft peaks form (30–60 seconds).

Cut pie into wedges and serve with whipped cream.
