Place ricotta cheese, honey, and vanilla in a food processor.

Process on high for about 60 seconds until completely smooth.

Transfer mixture to a small container and refrigerate for about 2 hours until well‑chilled.

In a small saucepan over medium heat, combine coconut sugar and balsamic vinegar.

Bring to a boil and simmer for 2 minutes, stirring occasionally, until slightly thickened.

Cool balsamic syrup to room temperature.

In a medium bowl, toss strawberries with the cooled balsamic syrup to coat evenly.

Divide strawberry mixture among 4 small serving dishes.

Top each with ricotta cream.

Garnish with fresh basil or mint if desired.
