Ingredients

1 cup organic peanut butter

1 cup coconut sugar

1 free‑range egg (farmer markets are best source)

1 teaspoon non‑aluminum baking powder

Instructions

Preheat oven to 350°F.

Add peanut butter to the bowl of a stand mixer and mix on medium speed for 20 seconds to loosen texture.

Add coconut sugar and baking powder, then beat on medium speed until mixture is light and fluffy (30–60 seconds).

In a separate bowl, lightly beat the egg.

Add egg to peanut butter mixture and mix on low speed until fully incorporated.

Drop dough by rounded tablespoons onto an ungreased cookie sheet.

Lightly press each cookie down with the bottom of a glass dipped in coconut sugar to about 1/2″ thickness.

Bake on center rack for 8–10 minutes, until edges are lightly browned.

Remove from oven and let cool on baking sheet for 3 minutes.

Transfer cookies to wire racks to finish cooling.
