RAW BERRY COCONUT BITES

Ingredients

¼ cup (40g) dried blueberries

2 tablespoons chia seeds

1 teaspoon coconut flower nectar

5 dried dates (30g), chopped

5

10g dried white mulberries

1 teaspoon organic vanilla bean paste

1 tablespoon raw cacao powder

¼ cup desiccated coconut

¼ cup coconut flour

1 teaspoon coconut sugar

1 tablespoon (30g) organic silken tofu

2 tablespoons (40ml) plant‑based milk of choice (almond, coconut) or water

Instructions

Place all ingredients into a food processor.

Pulse until well combined, keeping some berry texture intact.

Roll mixture by hand into 9 evenly sized bites.

Coat each bite with extra desiccated coconut.

Refrigerate for 30 minutes before serving.

Yield: Approximately 9 bites (25g each).
