COCONUT BLUEBERRY OATMEAL BAKE

Ingredients

2 cups old‑fashioned rolled oats

1 cup unsweetened coconut flakes

¼ cup coconut sugar

½ teaspoon salt

1 teaspoon baking powder

1 teaspoon ground cinnamon

2 cups almond or coconut milk (carton type, not canned)

1 large egg

3 tablespoons coconut oil, melted (plus extra for greasing dish)

1 teaspoon vanilla extract

1 ½ cups fresh or frozen blueberries

Instructions

Preheat oven to 350°F.

Grease an 8×8 baking dish with coconut oil.

In a medium bowl, mix oats, coconut flakes, coconut sugar, baking powder, salt, and cinnamon.

In a second bowl, blend milk, egg, melted coconut oil, and vanilla.

Place half the blueberries in a layer in the baking dish.

Top with the oat mixture.

Pour milk mixture evenly over oats and blueberries.

Finish with the remaining blueberries on top.

Bake for 35–40 minutes, until oatmeal is set.
