COCONUT OIL CRUNCHY PEANUT BUTTER COOKIES

Ingredients

1 cup coconut oil

2 ½ cups whole wheat flour

¾ cup organic cane sugar

1 1/3 cups brown sugar

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

3 large eggs

1 teaspoon vanilla extract

1 ½ cups crunchy, unsalted natural peanut butter

Instructions

Preheat oven to 350°F.

In a medium bowl, mix together flour, baking soda, baking powder, and salt.

In a large bowl, beat coconut oil and peanut butter with a hand mixer on low speed.

Add eggs and combine thoroughly.

Beat in cane sugar, brown sugar, and vanilla until fully combined.

Mix in flour mixture using a wooden spoon or your hands; dough will be dense and thick.

Roll dough into balls and place on a baking sheet.

Flatten each ball slightly with a fork, creating hash marks.

Bake for 8–10 minutes until set.

Yield: Makes 3–4 dozen cookies
