Instructions

Preheat oven to 400°F.

In a large baking dish, mix cooked quinoa with salt, coconut or almond milk, vanilla, melted coconut oil, raisins, chopped apricots, additional coconut oil, cranberries, shredded coconut, and toasted almonds.

Stir thoroughly to combine all ingredients.

Place baking dish in oven and bake for 45 minutes.

Serve warm.
