Instructions

In a food processor, mix coconut butter, sliced strawberries, and maple syrup until well combined.

Using a cookie scoop or spoon, drop small balls of filling onto a lined baking sheet.

If filling is too soft, refrigerate for 15 minutes.

Place baking sheet with formed balls in the freezer to firm up.

While balls are firming, melt chocolate chips and almond milk using a double boiler.

Stir constantly until chips are melted and mixture is smooth.

Working quickly, use two forks to roll balls in melted chocolate.

Place coated balls back onto lined baking sheet.

Freeze finished truffles until firm (30–60 minutes).

Store in fridge for up to 2 weeks or freezer for a few months.

If frozen, let sit 1–2 minutes before eating.
