COCONUT QUINOA PUDDING

Ingredients
1 cup cooked quinoa, ½ teaspoon salt, 2 ½ cups coconut or almond milk (not the canned coconut milk, but the type in the carton), 1 teaspoon vanilla extract, 3 tablespoons coconut oil, melted, 1/2 cup raisins, ½ cup dried apricots, chopped, 3 tbsp. coconut oil, ½ cup fruit juice-sweetened dried cranberries, ½ cup shredded unsweetened coconut, ½ cup slivered almonds, toasted
Instructions
Preheat the oven to 400 degrees Fahrenheit. In a large baking dish, mix the quinoa and the other ingredients thoroughly. Place in the oven for 45 minutes. Serve warm.
Yield: 3/4 cup (good for 4 to 6 scoops)
