COCONUT OIL CRUNCHY PEANUT BUTTER COOKIES

Ingredients

1 cup coconut oil, 2 ½ cups whole wheat flour, ¾ cup organic cane sugar, 1 1/3 cups brown sugar, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, 3 large eggs, 1 teaspoon vanilla extract, 1 ½ cups crunchy, unsalted natural peanut butter

Instructions

Preheat the oven to 350 degrees Fahrenheit. Mix together the flour, baking soda, baking powder and salt in a medium bowl. In a large bowl, beat together the coconut oil and peanut butter using a hand mixer on low speed. Add the eggs and combine thoroughly. Beat in the sugar and vanilla. When fully combined, mix in the flour mixture using a wooden spoon or your hands. The mixture will be quite dense and thick. Roll into balls, place onto a baking sheet and use a fork to slightly flatten the balls while creating hash marks. Bake for 8 to 10 minutes

Yield: Makes 3 to 4 dozen
