Ingredients:

2 tablespoons coconut oil, melted and cooled

2 pounds sweet potatoes, peeled and cut into ΒΌ-inch thick rounds

Salt to taste

Instructions:
Preheat the oven to 400 degrees Fahrenheit. In a large bowl, toss the potatoes with the coconut oil and salt. Spread in a single layer on a baking pan and roast for about 20 to 30 minutes.
