Coconut Blueberry Oatmeal Bake Time: 45 Mins <<< Back
Ingredients:

2 cups old-fashioned rolled oats

1 cup unsweetened coconut flakes

1/4 cup coconut sugar

1/2 teaspoon salt

1 teaspoon baking powder

1 teaspoon ground cinnamon

2 cups almond or coconut milk milk

1 large egg

3 tablespoons coconut oil, melted, plus a teaspoon or so for greasing the baking dish

1 teaspoon vanilla extract

1 1/2 cups fresh or frozen blueberries (fresh or frozen)

Instructions:
Preheat the oven to 350 degrees Fahrenheit. Grease an 8 x 8 baking dish with the teaspoon of coconut oil. In a medium bowl, mix the oats, coconut flakes, coconut sugar, baking powder, salt and cinnamon. In a second bowl, blend the milk, egg, coconut oil and vanilla. Place half the blueberries in a layer in the baking pan. Top with the oat mixture and then pour the milk mixture over the top of both. Finish the dish with the last half of the blueberries. Bake for 35 to 40 minutes, or until the oatmeal is set.
